How much meat from a short leg

Taking a short leg steer in for slaughter in next couple of weeks, 27 months old. How much meat roughly might I expect him to yield?

Hi,

We've only had one done so far and we got back 70kg odd of meat after it'd been cut up/boned out! Not sure how that compares to others on here. There is a post/spreadsheet by someone on here with loads of info.

It is delicious meat, enjoy.

It really depends how heavy he is now? We usually get between 80 - 100kg from most short legs at that age.

30% less than a longie.

PS. edited, my limited records show shorties @ 80-100 and non-shorts 110-130 or thereabouts. Obviously, there's plenty of exceptions outside those ranges though.

The steer weighs 140kg on the hook in the butchers. I'm still confused between dead, live and carcass weight. Is the on-the-hook weight called "dead weight", or is that "carcass weight?
From the weight on the hook, what percentage might we end up with as meat?

Hook weight, carcass weight & deadweight are all the same thing. Expect about 65 -75% of that weight back as meat, depending upon how fat it was.
