we have run short of our own beef ,have not got a dexter ready for a while, but have a 16 month old a/a hereford cross who looks quite good in fact she is the same size as my 3 year old dexter any idea what the beef should be like at this age or should we wait??

I suppose it's a matter of finish. If they're leggy and not much finish then they're going to be poor, but if they have a good finish then I suppose they'll be fine. Never done it, just guessing.

Sorry I posted in a bit if a hurry and should have explained myself. We needed to slaughter him for our own reasons but what I am saying is if short of beef why not pick on the best one and do it - that is what they are for after all.

We were concerned with ours as he wasn't traditionally finished and bulked out but was reasonably covered, however he is eating very well indeed and in fact taste and texture is the best ever!
