It is I admit a VERY trivial thing but has anyone else noticed how they can be born with these humungous wingdings BUT then by the time they are fully grown they have dinky ears?

Yes! I noticed the "wings" on the photo of your dun bull when he was a calf.
I breed the dwarfs and more often than not they are born with legs that appear long, and then it is amazing to watch them do what I call growing "down". The legs growshorter.
