I've got a 38 months old heifer that lost her first calf at birth. Born backwards, my fault, left it too long because she was a heifer and by the time I acted, the calf had just died. 2 a.m. in the morning, vet out, etc etc, luckily inside.
Anyhow, I'm thinking of beefing her. She's very chunky, slightly fat, if she was graded she'd probably be O+ or R 4/5. Just wondered what she might taste like and also would you hang the carcass longer than normal? Our abattoir will hang for as long as we want if the carcass will take it, so got the option.
Thanks
PS. She lost the calf 2-3 months ago.

I did a similar heifer a few years back. She'd had one calf and was 36 months of age at slaughter. She was delicious. I didn't get the grade, but her dead weight was 206 kg, so quite a big girl. She was hung for 2.5 weeks.
