Hi

I have a small medium legged steer that I have run on to (hopefully) beef up a bit. He is currently 23 months, am I correct that I can slaughter him for food up to (but not including) 30 months old?

Yes, but remember they take a very strict line on the 30 months - be sure not to get caught out by the length of time in the lairage at the slaughterhouse if you leave it too near the mark.
