Allowing for individual quality differences from beast to beast, which type of animal is most likely to produce the best carcass ? Short or none short ? Would there be an expected difference between the two types ? and if so what would the difference be?

Don't know about short but non-short excellent carcases approx 210kgs dead weight. mine mature before 30 months but usually after 24 on grass/haylage only. With new rules I shall try to finish them before 24months is up and hope the quality is still there, we shall see

Less bone-out wastage in the short Dexter carcass. We haven't culled any of our short-legged Dexters yet, so I can't give you a weight for them, but the three long-legged Dexters we put in the freezer weighed out at around 180 kgs of meat.
