What do you think is a fair/sustainable price for Dexter steers? In the past I've bought & sold at around the £1/kg (liveweight) mark, but have seen some advertised that will come out at about £3 a kg.

I think £1 a kilo is a fair price for a no hastle deal, yes when you kill them they are worth a lot more but then its you that has all the headaches of killing, butchering and selling. If you are paying £3 a kilo and the animal weighs 200 kilo's there's not a lot of margin left is there.
Look on this site, there are plenty of hefers for sale and they kill out the same and are supposed to taste better.
