Yes Beryl - I have a recollection of a huge charolais bullock that went in the freezer here when I was in my teens. There was only myself, Mum and Dad to eat him and the meat was hard and tough in texture - like pork can sometimes be, quite light coloured, especially when cooked and tasteless!

I remember that when my mom cooked us steak, we would all make sure we were at the table, it was a special occasion. Then gradually, steaks became like blotting paper probably somewhere around 1970-80's. I then spent the next 40 years remembering what a steak used to be like and having one every six months to remind myself and always being disappointed. By the end it's like chewing a piece of carpet with the underlay still attached. Smothering it with sauce being the only way to make it palatable. I thought it was me....I didn;t realise it was th beef that had changed. Before tasting Dexters I ate almost no beef at all, it being my meat of last choice every time. Now it's 2-3 times a week.
