Dexters and Beef - Where do we go from here
It comes as a slice about half inch thick (a bit thinner than most of the steaks they cut) not as a joint. I forgot to put on the list that I did have chuck steak joints last time as well. These slowish cook beautifully. My least successful joint was the rib (it is called boneless but has a bit of bone left in) which has a small amount of the most succulent meat but too much fat for my liking. I think this may be the cut which gets rolled by other butchers ie rolled rib, like brisket.

Here in my part of Canada, all the butchers wrap in the traditional wax-coated freezer paper. The better wrappers use two layers. I confess to not liking plastic bags or styrafoam although I do get my roasting chickens back in plastic bags. The meat just doesn't breathe when sealed in plastic and I have yet to have problems with freezer burn.
I was going to sell a Dexter side to my relative with the price based on the hung or rail weight but he changed his mind so I ended up weighing out each package of his side and splitting it into 3 parts, keeping most of the mince and all the loin for myself (and all the organs as no one likes them around here.)
I made up 3 boxes of approximately 25 lbs. each and then checked on the beef prices in the store to get an idea what all this stuff is selling for. Depending on what was in the box, the average price per pound ranged from $6.16 to $6.74. I priced the mince at $4.00. A friend bought one box and my very smart nephew bought the other two! Next time, that same nephew will get first choice :;): Total weight of that side (of actual meat) was 112 lb. 13 oz. This was a small, light steer out of Saltaire Platinum but he was very "smooth" looking so I guess he had a good finish. Never had wormer, antibiotics, vaccines or grain.
