I'm sure that this has been covered before, but I can't find the thread.
We have just taken our first boy into the freezer, and I am looking for some guidance on what I should charge for the various cuts.
Also, does anyone manage to direct sell say, half and animal, and what would you charge then?
By the way, the meat is fantastic! :D
Beef Prices - How much should I charge
Dolmelys Dexters Price List for vacuum packed, frozen meat. Professionally hung, butchered and packed. Sold from our farm which is licenced to sell frozen meat:
Best roasts: £6.70 per kg; Slow-cook joints: £5.10 per kg; Mince £1.30/500g; Cubed Stewing steak £1.90/500kg; Braising and LMC steak £2.55/500g; Rump £4.45/500g; Sirloin £5.40/500g; Fillet £6.55/500g; Beefburgers £2.55 per pack, Sausages Beef, beef and Mustard, beef and Tomato £1.25 - £1.65 per pack (£1.85/500g); Liver £1/500g. Also Slow cook packs Approx 8.5kg - £35; Standard packs Approx 9kg - £50; Best packs Approx 8kg - £65. Burgers and sausages are tray packed.

i have just got back today a 18.5 month old short legged rig ( castration was not totally succesful so he had to go early)
I got 265.5 pounds of meat plus the liver and kidneys.I sold the meat in mixed packs of around 30 pounds weight @ £3.00 per pound. total £796.50 less £145 for the butcher who put it all in bags and sorted it into the packs as well.
Now what would you make on a proper non-short taken full term..... a lot more.

Yup! I think you did well with your young short-leg but a non-short 24 month old weighed 209.5kgs = 460.9 pounds weight
The butcher prices all joints but he grossed £1,200 with £300 killing and butchering costs.
The last 2 I took to the butcher had meat THROWN AWAY! Butcher decided it was rotten.... decided to be very apparent this time and I got all of the meat.
