First beef nerves! - Is it normal??

Yes Colin, every box has pretty much the same contents except that we don't include any fillet, which we sell separately, and only 4 boxes have a two-rib joint and the other 4 have a roasting joint (boneless) instead.

I have just updated my records on dexter beef prices as of Oct 2009. These figures are an average of a small number of the more prominent farms that publish their prices online. The figures do not include prices from smaller farms because although you could argue they should be included in an average, it is the larger producer that probably account for most of the meat sales, so an average of their prices is more useful I think.

Fore Rib on the bone £ 13.25

Fillet £ 37.00

Braising Meats etc
Braising Steak £ 8.35

Sausage (plain per kilo) £ 7.65

I work out this equates to about £11.65 per kilo average for the carcass, if you ignore offal, sausages and burgers.
