I''m currently looking at much the same thing as Clive, how Spanish bull fight bulls are bred. The most interesting thing is that this "wild " type, thought in the 1920's-30's to be the nearest thing left to the aurochs, is in fact a product of selective breeding in the 18th century. So, while Britain was producing the huge Shorthorns, Spain was going iin the other direction at the same time. The bull fight bulls are 5-600kg liveweight at 4-6 years old, off grass. Only about 90 out of 350 actually go to the bull ring, the rest go through normal beef channels.
